Summer in Alaska means long days of ripening fruits and berries; harvests of gigantic garden vegetables; and baskets of seafood caught fresh daily - the makings from which celebrated chefs and creative camp cooks fashion fabulous feasts to match the magnificent land from which it comes. Up here people take their food seriously; you gotta have a hearty, nutritious meal when it's 40° below. The taste of Alaska incorporates many flavors and traditions from the Native population to the pioneers and prospectors that settled in The Last Frontier.
Wishing to capture the taste of Alaska, Executive Chef Mike Römhild seeks out local recipes and fresh local ingredients to create delicious Alaskan inspired dishes onboard the most prestigious cruise ships in the world. After years of scouring markets and frequenting fishing docks, he has put together a selection of his own Alaskan recipes that he generously shares with us here. Alaskan Salmon Burger
1 ½ pound fresh Alaskan salmon filet (⅔ processed in the meat grinder, ⅓ finely diced)
1 tbsp capers
1 tsp lemon juice
1 tbsp each of chopped parsley, dill & chervil
salt & pepper, worcestershire sauce, Tabasco & caper fond to taste
1 cup crème fraiche or sour crème
1 tbsp chopped chives
2 tbsp diced roma or vine ripened tomato
lemon juice, salt & pepper to taste
To begin, prepare the crème fraiche. In a small bowl mix crème fraiche, chives and tomato together. Season to taste with lemon juice, salt & pepper. Set aside for at least half an hour to allow flavors to blend.
Next prepare the Alaskan Salmon Burgers by combining salmon, capers, lemon juice and herbs gently. Season to taste.
Shape into hamburger size patties & grill to preferred temperature. Serve on herb or sun dried tomato bun with crème fraiche mixture and baby lettuce for ultimate flavor.
Note: May also be shaped into smaller patties for cocktail canapés.
